Gadecki and Peers conceded just six points on their way to winning the 10-point tiebreaker and claim the silverware.
They are the first all-Aussie team to win the title since Matt Ebden and Jarmila Gajdosova in 2013.
It was the first all-Aussie doubles final in Melbourne since 1967.
"A fantastic moment for them both," Aussie great Sam Stosur said on Nine.

Fellow former pro Casey Dellacqua was delighted to see the Aussies celebrate the victory.
"It was a wonderful match from all four players," Dellacqua said.
"Great scenes here as they go and chat with their coaching team, family and friends. A lot of emotion.
"That is a massive win for John Peers and Olivia Gadecki. Wonderful tournament."
There was a touching moment at the ceremony when beaten Birrell got the Rod Laver Arena crowd to sing happy birthday to Smith.
Gadecki and Peers accepted their trophies and then paid credit to their families and friends, as well as the crowd.
"To my family, kids, wife, mum, dad, everyone, thank you so much," Peers said.
"I know I'm never home much these days, but thank you for coming along with the journey.
"So much fun to be here playing in front of everyone here and couldn't do what I do without you guys.
"It is never easy supporting two Aussie teams. We thought we would hear a few more 'Aussie, Aussie, Aussie, oi, oi, oi, but we would not be sure who you're going for."
